Inspired by his travels- Thomas Henkelmann likes to break down boundaries between products and to create surprising combinations such as his champagne sauerkraut accompanied by a seafood mousseline. Each of his recipes makes a veiled reference to his origins. His partner Theresa - an interior designer - has turned this hotel into a setting worthy of his cooking by creating a European atmosphere inspired by Balinese and Chinese styles.
